WHere is a home-style interpretation of a cocktail featured on a new menu. This is a large-volume prepared mix which is packed with flavours of the holiday season, making it ideal for a festive gathering. Save the extra syrup to use in morning drinks, puddings, or to make additional servings of bikinis.

Makes enough for 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
For the Citrus Syrup: Place every items in a pot, bring to a gentle boil, stirring to dissolve. After that, take off the stove and let it to cool down entirely. Decant into a clean bottle, cap it keeping it chilled, it can be stored for around one month.
Preparing the Premix: Mix the specified spirits and syrup into a sizeable container, leave to sit for one hour, then filter it preferably using cheesecloth, to ensure it's fully clarified.
To serve: Add 85ml of the premix into a stirring glass packed with ice, gently stirring gently for a minute to cool it down. Filter into a cold coupe glass or a similar vessel, top with a few cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
